Each year, we use all the wines we need to reproduce this House Style. We appreciate this classic blend "without year", with a constant taste, for its liveliness, its lightness, and its finesse: all the purity of the Great Chardonnays of the Côte des Blancs.
For us, this cuvée must awaken the taste buds without attacking them (hence the importance of reserve wines kept in bottles), flatter with its fruity and very fresh side. This wine pairs well with saffron-roasted langoustines, chicken breast with Époisses cheese, or fillet of pike-perch with white butter sauce. The parcel of our Chablis 1er Cru Côte de Léchet is located in the Milly commune, on the upper slope of the same name, which is extremely steep (38%) and faces southeast, receiving full sunlight. The vines are approximately 50 years old, resulting in a low yield and small clusters. 991 | Chateau Chantalouette Oak, Vanilla, Tobacco, Plum, Blackcurrant Château Chantalouette is the second wine of Château de Sales. Owned by the same family for over five centuries, the 116 acre estate is the largest in the appellation and boasts the only true castle of Pomerol.
Certified of "High Environmental Value" (HVE) since 2020, Château Chantalouette practises virtuous viticulture that integrates and develops biodiversity. The viticultural approach is traditional: the vineyard is ploughed regularly and cultivated with respect for the environment; cover cropping and green harvest are practised with great care. The grapes are harvested by hand at optimal maturity of each bloc.
Vinification is managed delicately, leading to beautifully crafted wines that are expressive of their terroir. Traditional racking and light egg-white fining help to preserve the brightness of the fruit.
Chantalouette is named after one of the larger parcels constituting the vineyard of Château de Sales. 997 | Chateau D'armailhac 5eme Grand Cru Classe An attractively intense, deep and dark red. The intense nose offers a subtle combination of red fruit and attractive oak, giving way to denser aromas of roast coffee and some slightly spicy notes. The palate is well-structured, on expressive, velvety tannins mingled with a host of ripe fruit and toasted flavours. A long and silky finish reveals excellent balance and fine expression of the terroir. 2012 was a year of contrasts. The winter was cold and very dry. The average temperature in February was the lowest for fifty years.
April brought cool weather and abundant rainfall, while the weather in May and June was in-between. The flowering and veraison dates were the same to the day as the average dates for all the vintages since 1962.
Exceptionally dry conditions prevailed from 20 July to 20 September, concentrating sugar and tannins in the grapes. The month of August was the fifth driest in the last fifty years. By the end of September, the aggregate amount of rainfall was 26% lower than the average since 1962 (435 mm compared with 589 mm).
Picking at Château d’Armailhac began on 1 October and ended on 15 October.

996 | Chateau Latour Martillac Pessac Leognan Grand Cru Classe The 2016 Latour-Martillac has an understated nose at first, but it unfurls and becomes quite a seductive Pessac-Léognan with ample blackberry and raspberry fruit, and a subtle hint of black olive. I admire the precision here. The palate is medium-bodied with fine, supple tannin overlaid by blackberry and bilberry fruit, sea salt and black pepper. Showing excellent focus and abundant freshness on the finish, this is an assured and sophisticated Latour-Martillac that will give many years of pleasure. A mild and very wet winter led to an early and even budbreak. The wet weather lasted all the way through Spring accompanied by some very cool temperatures. Miraculously, full flowering took place between the 7th and the 11th of June which was a 5-day period of lovely weather and relatively hot temperatures. These conditions encouraged a quick and uniform flowering followed by a good return of fruit. The midpoint of the colour change of the berries happened around the 10th of August, with excellent uniformity across all the grape varieties. Despite these unpredictable swings of Nature; the heat and the absence of rain, the vines could maintain a healthy foliage right up to the beginning of the harvest thanks both to the water reserves and to the ploughing of the plots. Harvesting started 8 days late.
