Fermented in stainless steel at cool temperatures and aged for two months in stainless steel tanks on fine lees. A copybook Santorini, at least under the Argyros lenses, showing purity and race without excesses, developing for at least a decade.

Cuvee Monsignori is Estate Argyros’ vision on what Santorini Assyrtiko can actually be. Excessively old Assyrtiko vineyards, at least two hundred years old, giving minute yields. Fermented, partially uninoculated, in stainless steel, at cool temperatures and aged for ten months in stainless steel tanks on fine lees.
A wine of breed, extract and length, that needs about four years in bottle to unfold and can be confidently kept for more than a decade after vintage.

2019 saw some relief from the 5 year drought with a cooler, windier and wetter build up to harvest giving us smaller concentrated berries, ideal pH levels, fresh acidity and complex wines. The 2019 Muscat de Frontignan harvest was very short, taking place from late February until late March. In this amount of time we were able to make 26 different passes raging from high acidity to the later portion of very ripe raisins. Each pass was vinified separately initially and then blended together during the latter part of fermentation in order to balance out the sugar, alcohol and acidity. This allows the fermentation to stop naturally and without any intervention
Bright light gold in colour. A delicately perfumed yet elevated nose with flavours of white peach, citrus blossom and orange zest. There is an intriguing creaminess on the nose followed by nutmeg and lemon curd. The palate abounds with complex flavours of oak spice, ginger and bright fruit. A delicate balance between sugar and acidity creating a seemingly dryer style of Vin de Constance. The wine concludes with a long and evolving finish with texture and a delicate spice.

The vintage is aged in oak barrels for about 10 months, then drawn off and put in tanks for 2 months before bottling.
The concentration remains but the register has changed; lying between very ripe pears and nuts – Brazil nuts and pecans, almonds, and not far from walnuts either; at the same time, a sweetness evoking sweet almond oil, hazelnut, a white peach halo, sensual white flowers – opened wide, white roses in particular, a touch of menthol excites the nose, with a tendency to swell, bringing freshness and energy; the nuts now combine with white chocolate, a touch of crème fraîche; broom flowers add to the growing charm of the whole, a note of vanilla; and finally there’s something like gougères, or even cream puffs.

The 2018 winter received only a third of the previous year’s rainfall. Combined with low temperatures in February, this lack of precipitation led to a late budbreak. However, generous spring rain arrived, lasting until the first days of April, while cool temperatures continued to slow down the growth of the canopy. This led to extremely balanced vines with little need for intervention. Bloom was one of the latest on record, occurring on May 24th. The fruit set was generous with beautifully full clusters of Sauvignon. The ensuing summer was mild, without extreme climate demand, creating ideal ripening conditions for white grapes with little to no need for irrigation. Continuing amiable weather in August allowed a slow maturation of the fruit. As a result, our team was able to harvest each block with great precision, at optimal ripeness.
The nose displays an intense bouquet of white musk, grapefruit and fresh rose petals, with a hint of blackcurrant blossom. It then opens on fragrances of kiwi, nectarine and mandarin zests. The palate is an explosion of white grapefruit and stone fruit. Creamy and savory, the mouthfeel turns to vanilla bean and cardamom, with delicious comforting texture and lingering freshness
